Tilt back construction allows the mixer attachments to be raised and lowered into the bowl easily. The attachments stay above the bowl so that drips don't get on the counter. You can lock it in the up or down position.

All four brands have intensely loyal users and correlate favorably for versatility, endurance and price. If price is an issue for you and you de facto want a Viking stand mixer then think the Vsm500. It has a 5 quart bowl and an 800 watt motor. And it sells for about 0 less than the Viking Vsm700. It can do all the 700 series can do but just a slight bit smaller batches. If you don't need the huge capacity of the larger mixer then you probably won't miss the 1000 watt motor and the 7 quart mixer bowl.
